These Are The Best Chocolate Chip Pudding Cookies, Which have been a favorite in my family for many years.
When I was a young mother, I found a recipe on the back of the bag of chocolate chips that I had purchased with a coupon. I remember looking at the recipe and thinking, “who puts pudding in cookies”?
Needless to say, I adapted the recipe from there over the years. My family’s favorite cookie? These cookies! They are even better with homemade Vanilla!
- 1 cup softened butter (do not melt!)
- 1/4 cup white sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla
- 2 large eggs
- 1 box vanilla pudding (3.4 ounces)
- 1 teaspoon baking soda
- 2-1/4 cup all-purpose flour
- 2 cups semi-sweet chocolate chips
- 3/4 cup pecans (chopped)
Preheat the oven to 350°F.
In a large bowl or stand mixer, mix softened butter, sugar, and brown sugar until creamed.
Add vanilla and eggs and mix well.
*Tip* When measuring the flour, spoon it into a measuring cup, so it does not pack, resulting in overmeasuring*
Sift the pudding, baking soda, and flour together in a small bowl.
Slowly add to creamed mixture, mixing well.
Mix in chips and nuts.
Drop by rounded tablespoonfuls onto an ungreased cookie sheet and bake at 350 degrees for 10-12 minutes.
The centers of the cookies will look slightly undercooked. However, they will firm up as they cool.
Remove cookies from the oven and let cool completely before moving them to a plate.
Omit nuts if there is an allergy.
You can also use 1 cup semi-sweet and 1 cup of white chocolate chips instead of 2 cups of chocolate chips.
You can also try a different flavor pudding if you are feeling adventurous!
