Discover Fireweed Jelly

There is no doubt that I love spending time with Daryl, but when we are out foraging like this, there is something that makes that time extra special.

The beauty of Fireweed may have something to do with that!

There is something about being handed a jar of Fireweed Jelly that always brings a smile to the faces of both the one giving and the one receiving. Those smiles continue each time you open the jar to get a little dab. It’s funny how many homemade things have that effect on people!

When I made the last batch, I gave one to my daughter-in-law for all of them to enjoy. A few weeks later, I asked my son if he enjoyed it, and he said, “what Fireweed Jelly?! I didn’t get any!” It turns out my DIL and sweet baby granddaughter, Bean, enjoyed the entire jar by themselves!

Ingredients

  • Jars for canning
  • 10 cups fireweed petals removed from stems.
  • 8 cups spring water
  • 7 oz pectin
  • 1/3 cup of lemon juice
  • 8 cups sugar

Instructions

Rinse fireweed petals and set them aside.

In a large pot, bring water to a boil and remove from heat.

Add petals to the hot water and let steep for 15 minutes.

Strain the liquid through a cheesecloth, and add the juice to another large pot.

Bring back to a gentle boil.

Add the lemon juice and pectin, and boil for 1 minute. (The color will be vibrant again after the lemon juice is added)

Add the sugar, stirring constantly, and boil for one more minute.

Pour the jelly into hot jars, leaving 1-inch headspace.

Process for 15 minutes in a hot water bath.

Remove jars from the water bath and cool until the next day.

The next day, remove the rings, check the seal, and store. Enjoy!
